Spicy Pork Stew

Meaty stew with diced tomatoes, green chilies, and a splash of hot sauce. You can swap in cubed butternut squash for sweet potatoes.

What You Need

1 Can Diced Tomatoes with Green Chilies

1/4 Cup Fresh Orange Juice

2 Thinly Sliced Medium Scallions

1 Minced Garlic Clove

1 tsp Ground Cumin

3/4 tsp Salt

3/4 tsp Black Pepper

1 pound Lean Pork Loin, cut into 1 inch pieces

1 large Sweet Potato peeled and cut

2 tbsp Lime Juice

1/2 cup Chopped Cilantro

What to Do

  1. In a large slow cooker, stir together tomatoes, orange juice, scallions, garlic, salt, and pepper. Add pork and potatoes and stir together. Cover and cook for seven hours on low.

  2. Stir in the lime juice and divide the stew evenly over four bowls. Add cilantro over the top.
